Pascati: Infused with India’s heritage

In the vibrant tapestry of India, where tradition and modernity unite, Pascati stands as a evidence to the exquisite art of organic chocolate making. Founded by Devansh Ashar, a culinary visionary with a passion for both tradition and innovation, Pascati is more than just a brand, it is a journey through India’s rich chocolate heritage. The name Pascati is derived from the Sanskrit phrase Pascat Parivesya, which translates to a “sweet meal.” This choice of name is significant, as it captures the essence of the brand’s philosophy – merging the rich traditions of Indian culinary arts with contemporary practices and tastes.

Devansh’s journey began in the self-effacing confines of his kitchen. Inspired by a simple observation, he embarked on a search to create organic chocolates that captured the essence of India’s flavours and traditions. After completing an online course with Ecole Chocolat in Canada, he began crafting his organic chocolates, sharing them with family and friends and participating in local markets. The positive feedback propelled him to establish a dedicated space in Daman, making him the third bean-to-bar chocolate maker in India and the first in Mumbai.chocolate

Raising the bar for sustainability

Pascati is proud to be India’s first USDA Organic and Fair Trade-compliant chocolate brand, reflecting its stringent quality standards in sourcing ingredients. Devansh partners closely with cacao farmer groups, ensuring that each ingredient is sourced ethically and sustainably. Collaborating with organisations like the Fair-Trade Alliance Kerala, Pascati guarantees that every organic chocolate bar contributes to a fair and equitable future for local farmers.

Devansh is deeply inspired by India’s diverse and vibrant food culture. By naming the brand Pascati, he pays homage to this heritage, emphasising that chocolate is not just a treat but an integral part of the dining experience, similar to a meal that brings people together. This reflects a broader cultural appreciation where food is cherished not only for its flavours but also for the stories and traditions it embodies. The use of traditional Indian flavours—such as spices and fruits and infuses each chocolate bar with a unique narrative, connecting consumers with the richness of Indian heritage.

By integrating these traditional elements into a modern chocolate-making process, Pascati creates products that resonate with both local and global audiences. This fusion allows chocolate lovers to experience a taste of India in a contemporary format, making it relevant and appealing in today’s market.

Devansh’s vision is to create a brand that not only respects the past but also embraces innovation. By marrying traditional flavours and techniques with modern chocolate-making methods, Pascati sets itself apart as a brand that respects its roots while looking forward to the future. This balance of tradition and modernism is essential to Pascati’s identity, as it caters to the evolving tastes of consumers who seek authentic yet innovative culinary experiences.Heritage
