One of the fastest routes towards achieving the mission sustainable development is veganism; a diet that excludes meat, dairy and other animal products. A vegan diet gives people the easy access to play their part in the bigger picture of protecting the planet from the threat of climate change and delaying the depletion of Earth’s resources. And with each passing day more Indians are considering being a part of this change.
Approximately, 30-40% of India’s population is vegetarian, however only 1% of this group are entirely vegan. This is due to the limitation of vegan options available in the country, though the good news is a big step is being taken to rectify this.
Goa, which is one of the most popular vacation destinations, will soon become even more popular for all the plant based enthusiasts, as it is about to get India’s first full Vegan Culinary School.
Training in Vegan
Veganism is the way of the future and anyone trying to be a part of this future as a specialised vegan chef can acquire extensive training here.
The Vegan Culinary School is the brainchild of Ashish Santhalia and Nisha Garg. Ashish is the course coordinator of the school who is also an educator with over 5 years of experience while Nisha is a chef with a recognised certification in plant-based cooking with an experience of over 10 years. Nisha will be the chef instructor for the course. Moreover, they both live a vegan lifestyle and hence, will be able to provide first hand knowledge to their students.
Starting in September 2022, the course will last for 11 weeks. The curriculum covers a wide range of topics, from industrial kitchen skills to gluten-free, no-oil, and raw vegan cuisine. The curriculum will also place a strong emphasis on the value of culinary wellness and how food can be consumed as medicine in treating cardiovascular diseases.
The classes will be held from Monday to Friday and trainees will be tasked to prepare a dinner for selected guests at the conclusion of the course. Completion of the programme will make them qualified to intern in any vegan or vegetarian restaurant across the globe.

The reason for choosing Goa as the location was because of the easy accessibility of plant-based ingredients and the presence of a vegan-friendly community with plenty of vegan and vegetarian restaurants. Along with that Goa is also an appealing destination that might entice many individuals to stay for the three months of the course.
