For years, the world has been served a version of chocolate where flavour is muted, origins are forgotten, and additives replace authenticity. In India, this story is slowly changing, and at the centre of this transformation stands Manam, founded by Chaitanya Muppala.
The name itself carries meaning. Manam translates to “We” or “Us” in Telugu, symbolising not just a company but a community. It represents farmers, fermenters, chocolate makers, chocolatiers, and storytellers working hand in hand to explore what Indian cacao can truly become.
The reason behind Manam
The idea of Manam was born out of a recognition that Indian cacao had never been allowed to reach its full potential. For decades, cacao in India was farmed and processed with little attention to the finer details that unlock its inherent flavours. Industrial chocolate, prioritising mass production, left beans underdeveloped and relied heavily on additives to cover up what was missing.
On the other hand, while the bean-to-bar movement in India marked an important step towards craft, it too carried its limitations. By starting with the bean instead of the fruit, many of cacao’s delicate flavour notes remained untapped. Furthermore, most bean-to-bar makers restricted themselves to producing bars, overlooking the immense versatility of chocolate as an ingredient.
Manam set out to bridge these gaps. For Chaitanya and his team, the mission was clear: to bring back the soul of chocolate by treating Indian cacao with the respect it deserves, and to prove that chocolate can be both deeply authentic and endlessly versatile.
At the core of Manam’s philosophy lies one crucial truth — great chocolate comes from great cacao. This belief has shaped their entire process. Working in partnership with more than 100 farmer-members in Andhra Pradesh, Manam ensures that the journey of chocolate begins with thoughtful farming practices and a focus on fermentation.
Through its sister initiative, Distinct Origins Cacao Fermentery in West Godavari, Manam has placed fermentation at the centre of its craft. Fermentation is often overlooked by large-scale chocolate makers, yet it is the very stage where cacao’s hidden world of flavour is unlocked. By introducing scientific methods and progressive techniques, Manam is able to draw out bold and distinctive flavour profiles that had previously gone unnoticed in Indian cacao.
This attention continues all the way through the chocolate-making process. From roasting and refining to conching, every stage is carefully executed to preserve the character of the cacao. Instead of masking flavours with sugar or artificial additives, Manam allows the inherent qualities of the bean to shine, resulting in chocolate that is well-balanced, layered, and expressive.
Chocolate as it should be
For Manam, chocolate is more than just confectionery — it is craft. Each creation is designed to reflect the natural richness of cacao while also being delightful to eat. The aim is to remind people of what chocolate should taste like: bold, nuanced, and deeply connected to its origins.
But Manam’s vision goes even further. Chocolate, in their eyes, is not limited to bars. It is a versatile ingredient that can be interpreted in countless ways. This philosophy is embodied in the Manam Chocolate Karkhana, a 10,000 sq. ft. immersive space that brings together retail, craft, and innovation under one roof.
The Karkhana is not just a workshop; it is an experience. Here, visitors are invited to witness the craft of chocolate making first-hand and to taste chocolate in forms they may never have imagined. With more than 250 products spread across 45 categories, the Karkhana demonstrates the true range of chocolate as an ingredient — from pralines and desserts to drinks and experimental creations.
It is also a space where Manam’s chocolatiers push boundaries, exploring chocolate’s infinite possibilities. By interpreting it in ways that span cultures and traditions, they show that Indian Craft Chocolate™ can be both rooted in local tastes and appealing to global palates.
Edition 2023: The beginning of something new
To mark its journey, Manam has introduced the concept of annual “editions” of Indian Craft Chocolate. Edition 2023 was the first of these, serving as a milestone in the brand’s story. It brought together flavours inspired by familiar Indian tastes and global preferences, offering chocolate that was complex, nuanced, and joyful.
This approach reflects Manam’s belief that chocolate should not only highlight the depth of cacao but also connect with people on an emotional level. Each edition is more than a collection of products — it is an invitation to experience chocolate in a new way.
One of the most distinctive aspects of Manam is its emphasis on community. The brand acknowledges that chocolate is not the work of a single hand but the outcome of many. Farmers, fermenters, chocolate makers, and chocolatiers are all seen as craftspeople, each contributing their skill to the final creation.

The journey so far
The path to creating a new culture of chocolate in India has not been without challenges. Convincing farmers to adopt new fermentation and drying practices required trust and collaboration. Educating consumers — many of whom had only experienced industrial chocolate — was another hurdle. Yet, these struggles became part of Manam’s identity. They highlighted the importance of persistence, community, and belief in the potential of Indian cacao.
Today, with more than 250 products and a growing reputation, Manam has already begun to shape a new era of Indian Craft Chocolate. Its creations are not just products but expressions of a philosophy — that chocolate should be authentic, flavourful, and full of possibility.
For Chaitanya Muppala and the community that surrounds Manam, the journey is only beginning. Each harvest, each fermentation, and each new creation is a step towards placing Indian cacao on the global stage.
